In order for me to help you, we need to dive into the deep end and evaluate your business from the ground up. I’ll ask you detailed questions to learn more about your business and enhance things that are working and improve processes. You’ll learn how to make simple swaps, minimize food waste, and use what you already have in your kitchen to create a better experience for your guests. You’re probably already doing things that only need a few swaps in order to nail vegan cuisine and serve more customers!

This is the fun part! We will create unique vegan options that are more than a veggie burger or a salad (because that’s so five years ago). I’ll draw inspiration from your best selling dishes and stay on theme with your current menu. Even omnivore customers will be impressed and want to try your new menu! That’s how amazing vegan food can be.

In order to create a new menu, you’ll need to learn more about vegan products and how to source them. I’ll research and focus on locally sourced ingredients and wholesale, when possible, and take you on a supermarket tour to show you where to purchase simple swaps.

This is arguably the most important part of the process. A restaurant could have a full vegan menu and still have staff who don’t know how to serve plant-based guests. I’ll provide training sessions for your staff to properly guide them through the new menu, educate them on the veganism and plant-based lifestyle, and how to answer frequently asked questions from vegan guests.

You probably aren’t getting a lot of vegan requests because your menu isn’t attracting vegan and plant-based customers. When people have a particular diet or allergy, 99% of the time they will look up menus online before they dine in or order takeout. In order to attract vegan customers, your online menu should be labeled and include MANY creative vegan options.

Now that veganism is booming, accommodating customers when they walk in the door just doesn’t cut it anymore. Vegans want to be served and have a hospitable dining experience like traditional guests: choosing a nutritionally balanced and enticing meal from a variety of labeled options, and have servers who understand vegan cuisine and can communicate the vegan offerings. If you aren’t attracting guests before they walk into the door, then you’re probably pushing customers away without even realizing it!

ANYTHING can be made vegan! A vegan menu should always be on-brand with your traditional offerings. This does NOT include an Asian stir fry at an American restaurant or a veggie burger at an Italian restaurant. Options that are not on-brand reveal that you haven’t put a lot of thought into the vegan options and don’t know what vegans eat.

If you really want to make an impact and implement a vegan menu that sells like hotcakes, you need to make it creative with multiple options that emulate traditional offerings! This is what we’ll focus on in the recipe development and menu creation stage.

Let’s say a family of four wants to eat out or order takeout together. One person is vegan, one person is mostly plant-based, and two people eat animal meat. Eating at a vegan restaurant would be great if everyone in the group wanted to eat vegan food, but that isn’t always the case! The vegan(s) in the group ALWAYS choose where to eat. If your restaurant or business isn’t attracting vegans before they enter the door, you’re not just losing out on a single meal—you’re losing out on the revenue of a four-person meal.

In order to meet the demands and desires of modern customers, you need to attract them with something that is original, nutritionally balanced, and will leave them coming back for more. This is difficult to do if you don’t know a lot about vegan cuisine and vegan customer service. I am an expert in the vegan hospitality field and will help you go above and beyond what you thought was possible.

Asking to remove products from dishes presents a number of problems:

1. There is a chance that the order might not arrive as requested. If there’s animal bacon on a veggie burger, cheese on pasta, or egg in a stir fry, it will be sent back to the kitchen. This is incredibly frustrating for the server, chef, and especially the guest, who will have to wait even longer to eat their food. The rest of their group will probably be finished eating by the time the food arrives! This also creates a lot of food waste. This could all be solved by having a 100% vegan version labeled on the menu!

2. If you think the first reason was frustrating, then try asking to remove ingredients when ordering takeout or delivery. YIKES! What should the customer do if they get home and the food is not what they ordered? Do they request that the correct order be delivered? Do they get a refund? Don’t bother offering them store or restaurant credit, because they won’t return anytime in the near future… unless you create 100% vegan options that are labeled on the menu!

3. Are there vegan substitutes for the removed ingredients? Tofu, tempeh, seitan, or beans when removing meat? Vegan cheese, queso, dressing, or cream when removing dairy? If not, you’re left with a meal that is severely lacking and does NOT translate into a hospitable experience. Don’t expect the customer to come back for more… unless you create 100% vegan versions of the dishes!

All three of the scenarios are common problems that vegans and restaurants experience on a regular basis. What do they have in common? 1) Customer satisfaction is not met and 2) you are unintentionally pushing MANY customers away. Will they write a negative review of their experience? Maybe. Will they tell their friends and other vegans about their experience on social media? ABSOLUTELY. This creates a ripple effect –– you could be labeled as a restaurant to avoid by the local vegan community and not even know it!

It is crucial to offer 100% on-brand, nutritionally balanced vegan options on the main menu. By doing so, you will attract more customers, reduce food waste and staff frustration, and increase sales and customer satisfaction. It’s a win-win for everyone!
